Problem

As a factory manager for a popular food manufacturer, you have been asked to assess whether your current factory capabilities allow for the commercial sterilization or pasteurization of two new foods not currently manufactured there. The factory can heat treat products to 110C for short or long durations and make a modified packaged atmosphere by reducing the amount of oxygen within the sealed packaging. You must choose two new products to recommend to your employer from the list below.

• Canned Asparagus
• Soybean milk

Task

i. Can the factory perform pasteurization or sterilization based on the factory settings? Why is this?
ii. What are the pH values of the given food products above?
iii. Based on the pH values and the factory settings, what two products would you recommend to the factory?
iv. Explain why you choose these food products. Why do they need to be selected for your answer to question 1?
v. Explain why you did not select the other food products and why you could not use them at the factory.
