Some years ago, a meat packer in Texas was closed down by the FDA on account of the presence of some deadly bacteria. The firm sued, and the judge said the FDA acted improperly because consumers could protect themselves by cooking the meat long enough. Was the judge right to rule this way, or should he have ruled in some different way?
