Fruit or Vegatables? Please give your opinion to the article as well as cited work
The first thought I had of how something we view as a vegetable and is actually a fruit and is used both ways was pumpkin. Of course as a fruit pumpkin pie comes to mind right away but I love pumpkin muffins too and who could forget the wonderful pumpkin spiced latte, served up seasonally at Dunkin Donuts? However when it came to thinking about pumpkins use as a vegetable it was harder to come up with a way to use it outside of pumpkin soup or toasting and roasting the seeds for a healthy snack or crunch on your salad. Who would like some pumpkin pancakes for breakfast?
I also learned by reading up on them that because pumpkins are full of beta-carotene, antioxidants, vitamin C and A that if you make a puree and combine it with coconut milk and cinnamon it makes a great topical cream that is wonderful for your skin. I would find that combination hard to put on as a facial and not lick off due to the yummy smell!
Even the blossoms can be breaded and fried or used as a wrap. Who knew?
