Nutritional Functional role
Essential nutrient: A constituent of the essential amino acids methionine and cystine. Sulfur amino acids may be limited in some diets.
Browning inhibitor: Sulfur dioxide and sulfites inhibit both enzymatic and nonenzymatic browning. Widely used in dried fruits.
Antimicrobial: Prevents, controls microbial growth. Widely used in wine making.
