Whilst the restrictions eased, and the summer of 2022 was hectic, the Covid-l? Pandemic highlighted the fragility of the Ocean Veggie Plus business model. It relies exclusively upon the sales to full-service restaurants, particularly upmarket ?ne dining. Due to the increased costs, VAT rising back up and the end of the government's furlough scheme, many independent full-service restaurants, including some of their clients, did not reopen post-pandemic (Passport, 2022). The Thomases are wondering whether they should identify new customers in food services that might be more suitable for takeaway and home delivery.
