Explain the Factors Influencing RS Content -Amylose or Amylopectiz ratio?
Amylose/Amylopectirz ratio: In general, foods containing high amylose/amylopectin ratio lead to higher yield of RS. Amylose retrogrades very rapidly and results in a material highly resistant to amyloysis. In contrast, amylopectin undergoes retrogradation more slowly and is almost completely degraded by amylase.
