Explain amino acid composition
In terms of amino acid composition, high radiation doses such as those required for sterilization (e.g. 25-27Kgy), do not change the content of cystine, methionine and tryptophan in beef, despite the fact that these amino acids are highly susceptible to damage by other processes. Data given by Taub et. al. (1979) on the comparative effects of various processing techniques, including irradiation, on the amino acid content of beef.
