Explain about the Absorbed Moisture - water found in food?
It is the moisture that has passed through cell walls and entered the cytoplasm of the cell. It is this form of water that is believed to account for the hysteresis between the sorption and desorption equilibrium moisture content isotherms, described later. The absorption of water by an organic, chemically inert material is a complex process which is not entirely understood. This complexity becomes much greater when biological materials are involved.
