The purpose of the project is to apply the knowledge you are gaining in this class by developing an idea for a bar or tavern. The project is divided into four sections: Explain the marketing concept behind the business. Detail who the target clientele is, the type of customer you wish to attract and why you think the concept will appeal to this market. Detail a list of beverages served and the approximate price range for drinks. Provide examples of at least 2 similar concepts you have researched on the internet with similar target markets. Please remember to name your concept. Tell me why your place will be successful. Design the business and provide a detailed floor plan of the operation including notes on décor. Include the equipment, parking areas and POS system requirements. Include a one page description of the facility. Choose a location, investigate demographics for the area by researching US Census Data. Research and describe at least 4 competitors near your location and provide a brief SWOT analysis of each and your business. Tell me why you think you will be successful. Develop a brief operating plan for the restaurant that includes general staffing requirements in a spread sheet that details steps for staffing at various $ and customer levels, cost control procedures, ordering methods, inventory and how you will meet your local regulatory requirements. This should be 2-3 pages plus the staffing spreadsheet. Paste the four sections together and make them cohesive. Develop a basic business plan on an excel spreadsheet. Include projected customer counts, avg. check food, avg. check beverage and avg. misc. , sales beverage, sales food, cost of beverage, cost of food and general expenses, marketing, rent, insurance, taxes and estimated labor expenses calculated from the operation plan. Then write a one paragraph summation of the project. Be sure to also include: Number of hours open per day Number of days open Average Drink Price Average Liquor cost Cover charge if applicable Entertainment cost and type of entertainment Labor cost Overhead rent, insurance, marketing.
