Briefly discuss the Salmonella food infection.
• Salmonella food infection is caused by Salmonella gastroenteritis.
- Transmitted by faecal contamination of foods.
- Incubation period 12-36 hours.
- Symptoms: nausea, vomiting, diarrhoea, abdominal pain and green
- About 106-109 organisms must be ingested to cause infection.
- Salmonellosis prevented by: prevention of contamination of food by Salmonella, avoiding intake of contaminated food and by destruction of organism at 660C for 12-15 min.
