Bile, an emulsifier liquid, is made up by the liver and afterward stored in the gallbladder and discharged in the duodenum.
Bile is comprised of bile salts, cholesterol and the bile pigments. Bile salts are detergents, amphiphilic molecules, that is, molecules with a polar water-soluble part and a non-polar fat-soluble portion. This feature permits bile salts to surround fats within water-soluble micelles in a process termed emulsification for them to be in contact with intestinal lipases, enzymes that break fats into simpler glycerol and fatty acids.
