Bile, is an emulsifier liquid, which is formed by the liver and later is stored within the gallbladder and is released in the duodenum. Bile comprises of cholesterol, bile salts and bile pigments. Bile salts are detergents, amphiphilic molecules, which means, molecules with polar water-soluble portion and non-polar fat-soluble portion. This feature enables bile salts to enclose fats within water-soluble micelles in the process known as emulsification for them to be in contact with the intestinal lipases, enzymes which break fats into the simpler fatty acids and glycerol.
