PH of the saliva is about 6.8. Thus, it is slightly acidic pH. Saliva secretes food bolus and starts enzymatic extracellular digestion of the food. It does the work of buffer for mouth pH and it performs the chief role of having IgA antibodies which protect the organism from pathogens, also present in the tears, colostrums, and mother’s milk and in mucosa of the intestine and airways.
