Information about situation of the internal and external environments, such as temperature, pressure, spatial position, touch, pH, metabolite levels (or oxygen, carbon dioxide, and so forth.), light, sounds, and so forth, are gathered by particular neural structures (each for each type of information) named as sensory receptors.
Sensory receptors are distributed throughout tissues according to their particular roles. The receptors receive that information and transmit them throughout their own axons or through dendrites of neurons which connect to them. The information reaches central nervous system which interprets and uses it to control and regulate body.
