Water-soluble vitamins are those which are soluble in water. Fat-soluble vitamins are those which are soluble in the oil like fat, lipids. Vitamin C and vitamins of the B complex are the instances of water-soluble vitamins. Vitamins A, D, E and K are instances of fat-soluble vitamins. Fat-soluble vitamins, as they are not soluble in the water, cannot easily be secreted by the body. Thus they get accumulated in the tissues generating toxic effect when they are ingested in the over amounts than what is required.
