Write down the differentiation between fat-soluble and water-soluble vitamins? Why can fat-soluble vitamins cause injury when ingested in high amount?

Water-soluble vitamins are those which are soluble in water. Fat-soluble vitamins are those which are soluble in oil (lipids, fat). Vitamin C and vitamins of B complex are examples of the water-soluble vitamins. Vitamins A, E, D and K are examples of the fat-soluble vitamins.

Fat-soluble vitamins, because they are not soluble in water, can’t easily be excreted by body. So they tend to produce in tissues with poisonous effect when they are ingested in amounts over.
